Tuscan pecorino is a perfect companion for both red and white wine. Chianti, Brunello di montalcino or morellino di scansano would all complement pecorino cheeses really well.

Time: 20 minutes
Ingredients: semi-matured Tuscan pecorino, extra-virgin olive oil and grinded black pepper.
Method: Heat up the oven to 170°C. Slice the cheese in wedge-like pieces, then put the sliced cheese in an oven dish, bake it for about ten minutes. Before the cheese melts take it out of the oven and season it with black pepper and olive oil and... Buon appetito! !

Time: 30 minutes
Ingredients: 350g of fusilli, 300g cherry tomatoes, rocket salad, garlic, 1 glass of white wine, 200g of scraped seasoned Tuscan pecorino, extra-virgin olive oil, salt, pepper, mint and basil.
Method: Boil salty water in a pan for fusilli. While the water gets hot, fry the garlic in a frying pan until golden brown then add cherry tomatoes and let it simmer for 5 minutes. Add rocket salad, mint and basil, pour the wine on top of the greens and add 2 spoons of hot salty water from the pasta dish. Cook the sauce until the moisture evaporates and then add salt and pepper. Now that the sauce is ready, cook the pasta and mix it with sauce and lavish it with pecorino cheese.
spaghetti pecorino and pepperServes: 4
Time: 20 minutes
Ingredients: butter 200g, spaghetti 350g, salt, mature Tuscan pecorino 300g, salt and pepper.
Method: Melt the butter in a frying pan while boiling spaghetti. add spaghetti and 2 spoons of boiled salty water taken from the pot in which the spaghetti were cooked. Mix it thoroughly adding black pepper and scraped mature Tuscan pecorino at the same time.
Peel and chop some tomatoes, parsley and some garlic. The garlic should be chopped to very very small pieces.
Fry the garlic and the chopped tomatoes
on a pan. At the end of this you should have a tomato sauce.
Mix on a recipient eggs, pecorino cheese (should be very abundant), parsley and garlic together and make oval shaped balls. Fry them on a Pan.
When the croquettes are ready take them out and put them on the pan with the tomato and garlic sauce.
